This sharpener should always be used with water
Mino Sharp water sharpener, very fast and safe, recommended for Global knives.

This sharpener consists of two ceramic wheels:- the white ceramic wheel is coarse, the pink colored wheel is medium and completes the process.
Due to the fact that the sharpening groove and the ceramic wheel are not parallel, the oblique angle of the ceramic wheel is able to restore the razor sharpness of the knife.
Not suitable for specialist knives which are sharpened one side only and serrated.
Knives should always be hand washed in hot water after each use and carefully dried with a dry towel.

We recommend that the knives be stored in either the Global knife block, the case or on the magnetic holder.

The number of strokes required will depend on the type and condition of the knife, but we would recommend;
For global knives 7/8 strokes on the wheels.
For other brands 20 strokes on the wheels.

The only real difference between the SH440 and SH220 is size .The SH440 is very roughly twice the size wheels as the SH220 and therefore better "value for money" if you have a good collection of knives.
Spare wheels are available for both models.
