When striving to achieve the ultimate edge the harder the steel, measured on the Rockwell scale Rockwell 62° being the optimum, manufacturers realised this made the metal brittle. To get round this the Damascus system of layering, bending and hammering multi layers of various steels was used however this made the knives very expensive. I O SHEN have achieved the same effect on all their knives by sandwiching the internal hard core of Rockwell 62° steel between outer layers of Rockwell 10° steel which provide shock absorbing protection. This has produced an amazingly sharp and long lasting edge.
